First, let me tell you what I loved about this dinner.
1. It was pretty simple to throw together.
2. I customized the cups for different kids. Some had meat and some didn't (I only used 1/2 lbs of hamburger vs. the 1lbs listed in the recipe.) You could also leave out the egg in some of the cups if you have kids with egg allergies etc.
3. The smaller cups were awesome because even my 2 year olds could just pick them up and eat them without making a giant mess. They stayed assembled really well, and even when my kids bit into them they didn't fall apart.
4. I'm not a huge Lasagna noodle fan, so I love that the wonton wrappers are a lot less dominating than lasagna noodles and when I ate these for lunch today (leftovers) I could actually swallow because there weren't giant soggy noodles that were crunchy on the edges, the thought literally makes me want to gag. Way better leftovers than traditional lasagna.
Ingredients:
1 1/2 C Cottage Cheese
1 1/2 C Ricotta Cheese
1 1/2 C Mozzarella Cheese
1 Egg
1 Package Wonton Wrappers
(Don't use Eggroll wrappers)
1 Jar spaghetti Sauce
1 lbs ground beef (cooked-Salt and Pepper to taste)

Mix the 3 cheeses and egg together in a bowl
Place two wonton wrappers on top of each other so that the corners don't match to create an 8 point star.
Push the wrappers into the 12 capacity cupcake pan.
(I used one pan that holds 12 standard size cupcakes and 1 pan that holds 24 mini cupcakes - on the mini cupcake pan I only used 1 wonton wrapper per section, not two.)
If the wrapper cracks a little that's okay.
Once you've pushed all the wonton wrappers into place fill the cup half way with the cheese and egg mixture.
Next put 2 T of sauce on top of the cheese mixture
(1 T of sauce on the mini cups)
If you're adding the hamburger, add that now.
Next Sprinkle the top of each cup with some Mozzarella cheese.
Bake at 350 degrees for 20 - 25 minutes or until cheese is bubbling.
I only decided to take pictures and post this after we'd already eaten a few.
